Vegan Almond Butter Ginger Whole Wheat Heaven!

My domestic experimentation is slowly but surely paying off.
I made cookies because first off, I had most of the ingredients, and second, because I needed to supercede a disastrous batch of whole wheat dark chocolate chip cookies that really turned out to be a dry whole wheat crust with chocolate in it. 
There is no dairy or animal products in this recipe. It is very easy and there can be things added to it such as chocolate, flax, nuts, fairy dust, whatever. Honestly, if I didn't mess this up, you won't either!



Ingredients:

1 1/4 cups whole wheat pastry flour
1 tsp baking powder
1/4 tsp fine sea salt
2/3 cup almond butter
3/4 cup brown sugar
1/4 unsweetened almond milk (or coconut milk)
2 tsp FRESH grated ginger
1 tsp pure vanilla extract
Optional: 1/4 cup flaxseed meal (doesn't hurt and adds to nutritional girth)


Method:

In a small bowl whisk together flour, baking powder and salt
Use an electric mixer to beat together almond butter and brown sugar until slightly fluffy
Beat in almond milk followed by ginger and vanilla
Turn mixer to low speed and stir in flour mixture until just combined

If you'd like to make round cookies you can bake them immediately
For rolled cookies, gather dough into 2 balls, knead each once or twice and flatted into a disk
Cover and refrigerate until chilled, at least 3 hours or up to 2 days

Preheat oven to 350 and line 2 baking sheets with parchment paper
Spoon onto sheet (I made little cookie drops, about the size of 2 walnuts)
If you would like, decorate with almond slice or sprinkle with brown sugar



Bake until just dried on top, about 12 minutes and allow to cool




Nutritional Facts:

Per cookie: 75 calories, 3g fat, 40 mg sodium, 10g carbohydrates, 7g sugar, 2g protein

Best Easter Candy Line-up:


5.) Cadbury Mini Eggs - Delicious and hard to follow serving suggestion so be weary. These bags hide well under your bed for convenient snacking! 






4.) Starburst Jelly Beans - I repeat, Starburst. Not the generic 5 lb. pound you get for 99 cents at the checkout line along with baby wipes and a clip-on Purell in Walgreens the night before Easter. Who even buys those? You're not fooling your children with the disgusting coconut and licorice flavors thrown cheaply into the corny syrup jumble.
Starburst Original flavor, not Tropical, Sour, or Crazy Combo Explosion in Your Mouth and Face flavor. They are addictive, ridiculously bad for you, but so good at the same time.




3.) Sweet Tart Chicks, Ducks and Bunnies - Uh, again, an indulgence inspired by my size 0 sister. She would go the day after Easter or Christmas when all the candy is like 98% off and buy bags by the load and get the Christmas trees or Chicks, Ducks and Bunnies for the ultimate sugar high. That was all in the past, and after losing sensation in your taste buds and a horrible numbing and chafing at the roof of your mouth, this habit dies quickly.




2.) Cadbury Crème Eggs - Here's the thing, I am actually not super fond of this gooey concoction. I grew up surrounded by addicts such as my sister and was thrown into the Cadbury fire pit thanks to my half British background. I can have a bite and be satisfied. 
Did we know that Cadbury Crème Eggs in America are smaller than everywhere else, but dont' be alarmed, they still hold the same 150 calories and 5 grams of fat. How American, give consumers less bang for the buck and still make them fat. Did we also know that the center is a mix of white and yellow fondant aka sugar and water beaten into a cream aka don't wear a bathing suit this summer.





1.) Peeps - Marshmallow, sugar coated, artificially colored, lacking any nutritional value whatsoever PEEPS! My favorite! It has gotten a little out of control though because now they do have Peeps all year round, special Valentine's Day, Christmas, Halloween ones, etc. The thrill when I was younger was waiting for Easter season to come around and stock up on them. Now they have chocolate mousse flavored, dark and milk chocolate dipped, and even ones made with Splenda. I was given an Easter basket this year and there are mountains of Peeps staring at me on the table but I find myself struggling because I began a strict "clean-eating" regimen this week. I wonder if I can freeze them for a later time. No? Gross? I used to justify my habit because each Peep has no fat BUT is packed with 8 grams of sugar and 32 calories each. Kill me. Also, it takes a mere 6 seconds to manufacture a single marshmallow Peep with an output of almost 4 million Peeps a day. Where my peeps at!? I should stop, I know.

APRIL, YOU FOOL.

I AM BACK!!!!

Apologies. In summation, I have relocated to Boston for a bit, so yea, I guess I was a bit occupied! I'm back now and that's all that matters guys. 

My fingers are nervously tapping on these keys trying to think of what to even begin writing about. 

Let's debrief quickly, bullet style.

  • I'm really happy to be back in Boston. Clear head, clear mind. Surrounded by some amazing people. Miami, I will be back shortly because I miss you too.
  • Instagram is now available on Droid phones. Join the addiction.
  • Marlins had their game opener yesterday. They lost but at least played in a beautiful half billion dollar stadium. 364 games left to make it up hopefully.
  • I have the Hunger Games trilogy staring at me on my dresser. I need a little more time for the 'odds to be ever in my favor'.
  • If you ever want to feel immediately horrible about yourself, just play the London Olympics 2012 commercial on repeat and disappointingly reflect on what you haven't accomplished in your life.
  • Kim Kardashian and Kanye West are rumored to be in a self-absorbed relationship together. They have branded the name Kimye. They also should not have children, together or alone.
  • Power 96, yes I heard. But guys, DJ Laz's career was over way before he stepped down. Enjoy the nasally sounds of Lucy Lopez and the Yemisleysis girl who wants to give a shout out to her baby daddy who was recently deported.
  • Frozen Planet on Discovery is a must-see every Sunday at 8 pm. Made by the Planet Earth creators, it is indeed something else. It has 4 weekly segments and the last 3 are constantly being replayed or you can find them online. Astoundingly unique as it is interesting, it is wonderfully narrated by Alec Baldwin. I envision  him sitting in his suit with his new gingerly colored hairdo smirking handsomely and hand motioning with his rough, thick hands. I watch too much 30 Rock.
  • How horrible does Lindsay Lohan look these days? Like worn out K-Swiss sneaker soles. The classic ugly white ones.
  • Largest Powerball jackpot last week was not won by me. I did buy a ticket. There was a 1 in 176 million chance I would never have to work again. My cousins won $10 up here and quickly went into safe hiding.
  • When my baby cousin farts he goes, "excuse my butt." Gets me every time.
  • I've never appreciated hearing Pitbull on the radio until I came to Boston. 305 for life.
  • Tomorrow is Good Friday. No meat and reserved prayer session at 3 pm. Quick religious injection for my fellow Catholics.
  • Tiger Woods' recent win is a great reminder that sex addiction and infidelity only affects your golf game for 923 days.
  • Disney recently released Tangled Ever After. A 10 minute sequel to the movie. If you are just as obsessed with the movie as I am, you have to see this short film! I watch it over and over on my DVR and enjoy it way more than my 3 year old cousin who watches it with me.
  • Ladies, enough with the crop tops everywhere. They look like awkward handkerchiefs and half of the people wearing them, should not be.

Going to make fresh hummus now. I will be posting everyday to catch up and reel you all back in with my lyrical charm.

And I Wish You Joy And Happiness

I watched the entire Whitney Houston funeral today as I tended to some household duties today. We've all made the jokes, heard the jokes, believed the rumors, and said our "I told you so"s.
We are so shadowed by conflict, scandal and controversy that we forget to remember Whitney left behind a striking legacy and a heartbroken family. I will never forget when I graduated kindergarten at Alexander Montessori to her song "Greatest Love of All".
As they carried out her casket, they played her beloved "I Will Always Love You" and I could not help but tear up. As I watch everyone hug her mother and daughter each time they descend from and approach the altar, Whitney is once again humanized and we are reminded that she was a real person who loved and lost, who, herself, was loved and lost, and who will forever be loved but not lost.



God gave me a voice to sing with, and when you have that, what other gimmick is there?

Cupid: A Fat Toddler With A Weapon

Happy Singles Awareness Day!
I hope you all have your pinks, blushes, fuchsias, and reds on today with chocolate in hand!
I love you all.


In other news, let's discuss what's been going on in our world the last couple days that I've been absent:


  1. Mercedes Benz Fashion Week in NYC has been ongoing. You know how it goes. Some looks are absolutely grotesque and ridiculous, while others set the bar for this year's fashion do's.
  2. Whitney Houston passed away at the age of 48. Terribly unfortunate. Her demise was unbearable and disappointing and her voice and impact can never be replicated. Sad to know that my children will miss out on a lot of icons that I was fortunate enough to experience throughout my life. Let's remember her in all her glory. Let's also see who they pull out of a hat to prosecute.
  3. The Duggars' are "devastated" by their recent miscarriage of their 20th child. They will still try for more children. Um, I absolutely adore this family. I watch the show whenever I come across it and I support their Christian beliefs but I also know enough about anatomy and physiology to know that Michelle Duggar probably will not be able to have another child unless she has a spare uterus. However, I'd rather see the Duggars have more children than the Jolie-Pitt zoo over there.
  4. For all my fellow York Peppermint Patty aficionados, International Delight has just released a York flavored creamer! (They also have a ColdStone Creamery flavor which is probably just as disgusting as their ice cream.) Creamers are my indulgence and the flavors make me happy. It's the little things guys.
  5. The 2012 Grammys were Sunday night and Jennifer Hudson scrambled together almost overnight and paid a beautiful tribute to Whitney Houston. Lady Gaga did not win one award and probably regretted wearing the basketball net over her face in the meantime. That's what happens when you show up to the Grammys in an egg! Adele looked slimmer and glowing and took home six awards. I wish she would steer away from the black wardrobe finally. Foo Fighters came on top as well while Nicki Minaj's sacrilegious red carpet strut, and possessed performance placed her at the bottom.



   

6. Beyonce and Jay-Z recently published first pictures of their baby daughter Blue Ivy Carter. I don't 
    know if it's the fact that I have eyes or just my gut, but something about these pictures are off. You be the    
    judge. I'm just saying.

Every year, my best friend Genevieve and I go as famous mother/daughter duos. Two years ago we were Dina and Lindsay, last year we were Goldie and Kate, and this year we’re going as Tom and Suri.

Don’t follow trends, wear what feels good, and if you think you could stand to lose a little weight, you’re probably right.

Exclusive.

Where to begin with this one, where to begin....
It's a proud moment for my mischievous best friend William King from Holy Cross. I can't help but fuel his ego because it's only appropriate for me to be proud as well.
This is the same kid who likes to instigate, test, shake things up, is blatantly honest, is surprisingly sentimental, astoundingly corny, hopelessly romantic, and ridiculously too smart for his own good. We always laugh to each other wondering how different our college experience may have been if we did not know each other. Perhaps mine would have been a little smoother, but looking back, he kept and continues to keep me grounded. I guess he's grown up (a little) as he sits at his powerful and legally infused top New York law firm desk (usually Gmailing or group Facebook messaging me and his buds), chats up with his Columbia Law peers/superiors at countless open bar events, calls me with quick updates on his iPhone (always making sure to hold it like it's a microphone rather than a regular cell phone; this kid always thinks he's on stage), or drinks a beer atop his chic New York studio and breathes in the smoggy, busy, city air.
This is the kid who walked around Holy Cross in some sort of Pittsburgh Steelers attire, whether a Jersey, or mesh shorts, a peacoat, pencil and books in hand (I don't think he owned a backpack). The same one who ate chicken fingers and fries disgustingly smothered with ketchup on a daily basis and would rudely interrupt my five roommates and I "just to see if you guys had a beer". This is the kid who wore the #41 Holy Cross football jersey for years (interesting how the number was passed down) and made the difficult decision to retire the jersey. I mean let's be real, HC wasn't the all-star football team anyway, we did try our best though. He was chosen to study abroad in Washington, DC for a semester to rub shoulders with lawyers, politicians, and famous HC alum such as Supreme Court Justice Clarence Thomas in order to pursue completion of his English thesis and eventually apply to law school. This is the same thesis that I got the opportunity to proofread and make an appearance in. Of course I approved because I figured I'd be his campaign manager or his Chief of Staff one day. He's already establishing titles amongst his friends. I'm down to publicist now.
Upon his return from DC, he was a little sad. Missing the football meetings, missing the games, and lacking the massive amounts of muscle that once enveloped his athletic build. I'm always reminding him that he's getting too skinny. His nickname is "Pee Wee" after all, amongst other things...
So back to this proud moment. Not in honor of Black History Month, but rather just in honor of a historic year at my alma mater College of the Holy Cross, writer Diane Brady chronicles the relationship between a certain handful of Holy Cross students, and a hopeful University Dean who went on to lead remarkable lives.

The book titled "Fraternity" describes a racially tense Jesuit college in the wake of Martin Luther King's assassination in 1968, Reverend John Brooks, a white priest (who eventually became dean of the all male student body during those years) and his efforts to infuse diversity in the school. Unbeknownst at the time, Father Brooks helped enroll 20 African-American men who would quite frankly, go on to do big things. Diane Brady chooses to focus on five specific individuals, Clarence Thomas, Eddie Jenkins, Edward P. Jones,  Stan Grayson, and Ted Wells. She was fortunate to be able to personally interview and establish relationships with these men, even Justice Thomas opened up willingly because "Father Brooks asked [him] to do it."



Some people are awaiting the Disney movie adaptation of this book but let's delve a bit into these men and how their lives overlapped, intersected, and changed:

Clarence Thomas '71 - Supreme Court Justice, co-founder of Holy Cross' Black Student Union
Eddie Jenkins '72- drafted to the NFL to the undefeated Miami Dolphins 1972 Champions
Edward P. Jones - Pulitzer Prize winning author
Stan Grayson '72 - Lawyer and COO at M.R. Beal and Company
Ted Wells '72 - world reknowned defense attorney, a partner at William's firm (his superior and his friend)

Of course William had to be stirred somewhere in this mix. April of 2008, our senior year, marked the 40th anniversary of the BSU. I remember a packed weekend of events with distinguished alum, including those listed above, heart-warming reunions, and a certain debate between William and our peer on the topic of 'affirmative action'. I was in the hall to mingle with/stand in awe of the famous alum and show my support for my friend. I could not stay the whole time (which Will ever so kindly reminds me of) but he had quite the audience regardless. He brilliantly argued his side, and had no idea that four years later, would be described in such an interesting book.






At last, William, though anonymously described, we all know it's you and we all knew one day you'd be published. Congratulations. We know you already have Ted Wells' signature on your copy a couple days ago after cheering with him to the good life and your future successes and we know you won't live this one down. We'll be sending you our copies for your signature of course, as you've already requested. Four decades after their Holy Cross experience, you are part of their reflection with your own turbulent and interesting experiences. March is your month. See you as partner.

The Girl Who Really Liked A Certain Trilogy.

I have been in a semi-cold turned fever induced early night bedrest and have FINALLY delved into Stieg Larssen's brilliant yet twisted Swedish trilogy series. Of course I have the books laying here on my dresser, which I have yet to read, and the Hollywood version has recently come out but wow, you all must see the original version of "The Girl with the Dragon Tattoo", "The Girl who Played with Fire" and "The Girl who Kicked the Hornet's Nest", directed by Niel Arden Oplev. Subtitles are a must so they require your full attention you chatterboxes.
I mean, such originality, a shining cast, especially Noomi Rapace. She turned down the Hollywood version because she said that role was a very dark place for her and she did not think she could re-execute such darkness, morbidity, and crudeness. You can see her alongside Robert Downey Jr. in the recently released Ridley Scott movie "Prometheus". She is of Swedish and Spanish descent, is a beautiful girl in my opinion and extremely talented. I'm glad I finally saw them all. Now I must read them!

I Bleed Purple.

Did we all watch an impressive, uplifting 2012 State of the Union Address by President Obama? Regardless of your political agenda, it was well-written and Obama hit some amazing key points. Let's give America the boost it needs.

Now, I have the pleasure of humbly bragging that I went to College of the Holy Cross with Obama's speechwriter, Jon Favreau. He was Valedictorian of his class and after working with presidential candidate John Kerry, he was recommended to Obama on his turbulent, yet successful campaign. Since then, the two work countless hours, late caffeinated nights, and rewrite after rewrite on all his speeches together. Chris Matthews, another Holy Cross grad, discussed it all last night on his 'Hardball' show. It was nice seeing all the proud jabber going on among my HC colleagues on Facebook last night. Props to Jon, "the genius babe magnet", he's doing his thing. I hear he's looking for an assistant too so Jon, we'll be in touch.

I'm glad you've taken your health into consideration now as you continue to fry up chicken that surely tastes like Butterfinger, mix in your contagious Southern sass, and ultimately spew your evil genius marketing skills upon the world. Thank you for your dubious partnership with a recently approved diabetes drug. Anthony Bourdain clearly applauds your antics as he is "thinking of getting into the leg-breaking business so he can sell crutches later". Well done.

As I pack I feel like I'm packing to go back to college again thanks to all the long sleeves, coats, etc. jammed in my suitcase. Anyway, I will be back Monday after the long weekend. Off On A Tangent Inspired By Recent Actual Events

Please believe I am currently sitting in a Starbucks, wearing a maxi dress and Toms, like a complete hipster as I blog.

-Essie Luxeffects is a quick mood-picker-upper.
-Why is it that when you DON'T want to see someone, you IMMEDIATELY see them?! Poof!
-Leave the games to Parcheesi and Angry Birds. Not the dating world.
-Shall we place bets on numbers of marriages/pregnancies/scandals amongst our facebook friends this year? Anyone?
-Why does Mason Disick have a mullet?!
-Speaking of the Kardashians, do you ever wonder what Kim's face feels like? Because I definitely do.
-I'm included in a weekly Facebook message stream of  personal updates with my Holy Cross '08 football friends. It is quite hilarious. Shout out to William King because most of the updates are about him.
-I'm going back to Boston this long weekend. I am so excited to freeze my ovaries off and celebrate my cousin's 40th (er, I mean 20th?) birthday. If you're around, let me know!
-When plugging in a USB, you try, it doesn't fit, so you flip it over, still doesn't fit, then flip it again like the first time and then it works! WHY?!
-You know you're the laziest when ice from your fridge falls on the floor and you kick it under the fridge. Rock bottom.
-Speaking of which, and totally random I know, hence the title of this post, but why is it refriGerator, but then friDGe? Who invited the "D" to the party?
-Is there any worse feeling than plugging in your iPod to a new computer/laptop and skimming over iTunes pop-ups and thinking you deleted your entire music library?!
-The guy across from me looks/smells European. Oh and he has yellow Kanye West shutter glasses holding back his shoulder length hair from blocking his vision. Wow!
-Why are there so many job interviews happening around me at this moment? I love this sneaky insight into people's interview questions/responses!
-That new movie with Sandra Bullock and Tom Hanks "Extremely Loud & Incredibly Close" looks like a worthy tearjerker.
-Did we experience all the seasons this year in Miami?
-Hey iTunes updates, CALM THE HELL DOWN!

2011 is done. Here's what I've learned:



YOU come first no matter what.
Screw first impressions. Who are you to judge? 
Sometimes the rest of your life starts with goodbye.
Get back to reading books. You know, the ones with paper in them with more than 30 pages.
Don't invest in something worthless. 
Stop feeling bad for others. Who is feeling bad for you?
Don't glorify/dwell on the pettiness. 
Hold tightly to your values, morals, and class. 
Buy Just Dance 3 for Wii. DO NOT HATE.
Exercise keeps you sane.
You can't live a positive life with a negative mind, and your mind is too powerful to ignore.
Twitter is an amazing networking tool.
If it's in pieces, don' fix it. It will never be the same. A super glued vase will still leak water.
Turn off your phone for a weekend. Disconnect.
Keep Facebook light. Stop posting such suicidal, horrible, sneaky garbage people! No one cares.
If something seems wrong, it probably is.
Don't put all your eggs in one basket.
Believe always that the best is yet to come.
I used to be a huge critic, but country music is awesome. I'm moving to Nashville one day.
You will always know who your friends are. If you sense some doubt, they're not your friends.
Family first. You should damn well think so no matter how stressful dealing with family may be.
Everything in moderation.
KEEP CALM AND CARRY ON.
Don't you dare let anyone make you feel disposable or on reserve. 
Do something out of your comfort zone. You never know where it will take you.
Be the first to apologize. When you're wrong, you're wrong.
Join the fight against bullying. You have no idea how destructive your words can be.
Take a fashion risk. Who cares what people think.
When you do things, do them for YOU.
Put your faith in something. Faith is a fine pillow while fear keeps us up all night.
Follow your heart. 
Sucking at something is the first thing to becoming sort of good at something.
Let bygones be bygones. Who wants those hanging over their head.
You can't get to your future if your past is still present.
